Located in the heart of Blueys Beach just 20 minutes south of Foster-Tuncurry on the beautiful Barrington coast, surrounded by pristine beaches, lush greenery, and abundant wildlife. Our Club restaurant celebrates the beauty of our surroundings is committed to sourcing the freshest local ingredients and delivering unforgettable dining experiences against the backdrop of breathtaking Wallis Lake views. We are set to take our seafood offering to the next level. The club is now holding a Fish Receivers’ licence which allows for the sourcing of seafood direct from the fishermen.

Role Responsibilities:

  • Act as head chef in his absence, must be able to lead a team of over 15 people for fast paced high volume kitchen.

  • Collaborate with the Head Chef to develop and execute seasonal menus that highlight the freshest local ingredients.

  • Lead and inspire a team of passionate cooks to maintain high culinary standards and ensure smooth kitchen operations.

  • Oversee food preparation, cooking, and presentation to deliver consistently exceptional dining experiences.

  • Monitor inventory levels, manage food costs, and contribute to menu planning and development.

  • Uphold health and safety standards, including proper food handling and sanitation practices.

Requirements:

  • Proven experience as a Sous Chef in a high-volume, quality-driven restaurant environment. Min 12 months experience.

  • Strong culinary skills and a passion for creating innovative dishes using seasonal ingredients.

  • Leadership abilities with the capacity to motivate and mentor kitchen staff.

  • Excellent communication and organizational skills, with the ability to thrive in a fast-paced environment.

  • A commitment to sustainability and supporting local food producers.

  • Relevant culinary qualifications and training essential.
